When the Lebanese ask you kifak?, or how are you in Arabic, they are literally asking whether you are experiencing pleasure. Pleasure, or kaif in Arabic, comes from good food, good wine, and good company. Appetizers are the most important part of any Lebanese dinner. Several dishes are usually served together. They are placed in the center of the table and shared by all. Typically, arak, or anice wine, is served, as well as beer and other wines. These appetizers are known as mezzah, a word that comes from mazmazeh, or slow enjoyment.
